David's Kitchen: Dutch Oven Baked Ziti

I was talking about my new Dutch Oven at work and how proud I was of the Kale I had cooked over the weekend when Karl mentioned making Baked Ziti. That sounded like a great idea. As he began shooting off the ingredients he used I started my grocery list.  For the most part the recipe looks like THIS ONE but I kicked in a few things.

I added:

  • 1 pound of ground Italian sausage - yes, that's a lot of meat.
  • 1 large green pepper chopped
  • 2 teaspoons minced garlic
  • some garden fresh oregano
  • 1 cup ricotta cheese
  • 1 can diced tomatoes
  • 1 can tomato sauce

After it baked in the Dutch oven on my grill for an hour I placed it under the broiler in the kitchen to get a little brown on the top cheese.

Served with garlic toasted French bread.

The result was an army sized amount of ziti goodness.

I would have liked for this dish to come out a little creamier than it did but it was very tasty. Crumbled croutons on top added flavor and a crunchy texture.

Well, I found something to do with that sausage. Fresh brat rolls, Arthur Bryant's Original Barbeque Sauce, Gulden's Spicy Brown Mustard, topped with sautéd onions.

Boudin Stuffed Chicken with Cajun Sausage

Here's my Superbowl meal.

Butterflied chicken breasts stuffed with boudin and LeJeune's smoked Cajun sausage.

Side salad: Garozzo's Italian dressing, heart of palm, artichoke, red onion, parmesan cheese, fresh baby peppers.
